Chunky vegetables in a simple gravy style

Chunky vegetables ... oh yes thats what my kids love and they are best for the nutrition they need to keep growing the healthy way. A simple way to get them what they love but without any additional pour of spices or extras is this beautiful tireless recipe. This recipe just came out of the want for my kids to eat their veggies. They always ask me - Niks says "Mommy... big vegetable sticks plssssssss...' and Aadit says "Veggie veggie veggie" and that is what makes this recipe an always welcomed recipe for us.

A very simple way to put together a few little things to get in those most needed minerals and vitamins. Give it a try to get your kids to become real veggie lovers







Serves... 4 ppl
Serve option... Rice or roti

This is what u'll need....

Potato - 1
Tomato - 1
Onion - 1 medium, 1 small
Carrot - 1
Radish - 1
String beans - 5-6
Bean(any) - a handful
Jeera powder - 1 tspn
Green Chilly - 1 
Turmeric powder - 1/2 tspn
Gram flour - 1 tbspn
Mustard seeds - 1 tspn
Cumin seeds - 1 tspn 
Curry leaves - for tadka
Oil - 2 tbspn

Here is the stir....
  • Wash and rinse all the vegetables and cut them into long thin slices - Potato, Carrot, Radish, String Beans. Chop onion (1 big) and tomatoes into small pieces too and 
  •  Put everything in a cooker - all chopped vegetables, beans, green chilly and add salt, turmeric, jeera powder. Pour water as required and pressure cook the stuff for a couple of whistles
  •   Now while that is on the stove, heat a kadai and pour oil. Add mustard and cumin seeds. When they start crackling add curry leaves followed by onions(small onion finely chopped). Fry this till the onions are little more than golden brown


  • Sprinkle the gram flour and stir the mixture for a couple of minutes. Gram flour will give the gravy consistency as we are not adding anything else here

  • Add all the boiled vegetables and bring everything to a boil. Cook for a few more minutes till everything blends together. And i guess we are through. The gravy is ready to be served 
  •  Serve hot with Chapathis and the nutirious veggies( not little but a lot) are served right as needed

Note:
  • Dont overcook the vegetables as they might get mashed up. My kids love to pick each veggie chunk when they eat :)
  • The extra fried onions will get a good tadka taste
  • Fry the gram flour for a few minutes as you dont want the raw flavor to seep in when you eat
