Paneer Kheer / Paneer Payasam


Paneer is tasty in whatever form it takes or whatever it is made into. Paneer kheer is a tasty dessert served chilled to enjoy the grainy texture of crumbled paneer in thick milk  seasoned with dry fruits of choice. Love this as a very good alternate to regular kheers which are made at home

It takes very little time to make this dessert and also it is not very heavy to eat. So a very good option when craving for a lovely dessert to end a beautiful meal





Serves... 2 ppl 
Serve option... Chilled

This is what u'll need....

Milk - 1/2 litre
Vinegar - 1 tspn
Dry fruits - as needed
Cardamom powder - a pinch
Saffron - a pinch(optional)
Sugar to taste

Here is the stir....
    • Heat 1/3 of the milk in a sauce pan
    • When it starts boiling, add a tspn of vinegar to it and turn off the flame
    • The paneer and whey should start separating. Use a strainer to separate the paneer
    • Wash this under running water couple of times to remove vinegar smell and set it aside
    • Pour remaining milk into a pan. If planning to use the same pan then make sure you clean it thoroughly before adding milk to it
    • Heat the milk and bring it to a boil
    • Soak saffron strands in a separate bowl with a tablespoon of milk to infuse the flavour and colour
    • Turn down the flame and simmer milk till it reduces to half or is thick enough to your liking
    • Pour in the saffron infused milk into the pan. Give it a good stir
    • Add crumbled paneer into the milk
    • Add sugar as per you taste and liking and let it simmer for couple of minutes
    • Sprinkle little cardamom powder
    • Turn off the flame and let cool. Put it in refrigerator to chill
    • Serve chilled and enjoy


                                                  Note:
                                                  • Keep the flame on low and stir it continuously to avoid milk sticking to the bottom of the pan
                                                  • You can fry nuts in a little ghee before adding it to the kheer. This will make the kheer taste richer but heavy
                                                  • Adjust sugar to suit your taste
