Cheesy masala paneer buns


Cheesy masala paneer buns are spicy, cheesy and yummy. I made these for school breakfast-time snack and the kids loved it. If you can make the dough the previous night and let it rise in the fridge then you can pull this recipe together in the morning in no time. Kids will love to take a different snack to school and in fact they will ask you for more to share with their friends too

We love making stuffed buns at home. I try to use different kinds of stuffing to keep the kids loving it more and more. These buns were made a long time back but could not post it. I started my bread and bun baking with all-purpose flour only but now i use 50% whole wheat and 50% all-purpose flour. I think there is a very decent balance of taste which takes care of the nutty flavour of wheat flour

Freshly made homemade paneer tossed in a rich gravy filled with spices and cooked till semi-dry makes the perfect stuffing. Kids will love this



Serves... makes 6 buns 
Serve option... Hot

This is what u'll need...

For dough ->
Maida - 1 1/2 cup
Yeast - 1 tspn
Sugar -1 tbspn
Oil - 2 tbspn
Salt - 1/2 tspn
Milk - for brushing

For stuffing ->
Onion - 1
Tomato - 1
Cashews - 5
Ginger garlic paste - 1 tspn
Pav bhaji masala - 1 tspn
Coriander powder - 1/2 tspn
Garam masala - 1/4 tspn
Red chilli flakes/powder - 1/4 tspn
Paneer cubes - 1 cup
Cheese - 3 tbspn
Oil - 1 tbspn
Salt to taste

Here is the stir....
  • Use the ingredients mentioned under dough and follow the instructions in this link -> How to make pizza dough. Make the dough and let it rise
  • Wait till the dough has doubled in volume to be ready to make the bun
  • Meanwhile to make the stuffing roughly chop onions and tomatoes and toss it into a mixie jar
  • Add some cashews to the jar
  • Add salt, 1/2 teaspoon of pav bhaji masala and 1/2 teaspoon of ginger garlic paste
  • Grind all this to a fine paste
  • Heat a tablespoon of oil in a pan and pour the paste into the oil
  • Cook the mixture for 5-7 minutes on low flame
  • Add 1/2 teaspoon of coriander powder and 1/4 teaspoon of garam masala
  • Cook the mixture until it starts releasing oil
  • Sprinkle 1/4 teaspoon of red chilli flakes to the mixture and stir it until evenly mixed

  • Add paneer cubes to the mixture 
  • Grate cheese into the mixture. Use as much as needed. I have used about 3 tablespoons of mozzarella cheese, you can use more if you want
  • Mix everything well and keep it aside
  • Divide the dough into 6 portions
  • Roll out each piece into a thick small circle. Place a tablespoon of filling in the middle of the circle. I have used thin dough as kids like a thin layer of dough rather than like a proper bun

  • Pull the ends together and pinch the dough to seal it
  • Place  the formed bun seamed side down on a baking tray. Repeat with rest of the dough pieces
  • Let this rest for about 30 minutes. Once done brush the tops of buns with little milk
  • Bake this in a 180 degrees preheated oven for about 25 minutes or until the tops are golden brown
  • Remove from baking tray and let cool for about 5 minutes
  • Serve hot and enjoy your snack with your family


                                                            Note: 
                                                            • Adjust spices to suit your taste
                                                            • Adding cheese is optional but it interests kids :)
                                                            • I have made thin covered buns ass my younger one likes it this way. He doesnt like too much bread in the buns :)
