Fettuccine Alfredo


Remember the homemade fettucine that we made couple of months back. I did not post on how we used it up. That evening we made some delicious creamy fettucine alfredo for our dinner. Me and the kids loved it a lot. Oh yes I shouldnt forget saying what the kids told men"Homemade is homemade mummy and we should continue making it. We can help you make it whenever you want" Now that was really sweet ... I mean what more could one happy mummy ask for

Making the pasta was easy and pulling together this recipe was just a breeze. The smell and freshness of homemade fettucine was definitely a totally different feel. Especially the kids were very happy about how their favourite food was also completely homemade this time. We made it a couple more times but these times I would just roll out the dough and the cutting part had been completely handled by the kids. They were both very good at it. Though we got a few thick and few thin fettucine, it tasted perfect with lot of extra love added

Basic alfredo sauce calls for cheese - parmesan and mozzarella. I did not have paremsan 
so just added a little of mozzarella and it tastes perfect


Serves... 2 ppl
Serve option... Hot

This is what u'll need...

Olive oil -1 tspn
Butter - 1 tbspn
Garlic grated - 1 tbspn
All-purpose flour / Maida - 2 tspn
Milk + Cream - 1 1/2 cups
Mozzarella cheese - 1/4 cup
Parmesan cheese - 2 tbspn
Pepper to taste
Salt to taste

Here is the stir....

  • Melt butter along with some olive oil in a pan
  • Add grated garlic to the melted butter and saute for a few seconds till you can smell the garlicky aroma
  • Spoon in 2 teaspoons of flour into the hot pan and stir it for a while till the mixture gets bubbly. Keep stirring continuously so that the flour doesnt get burnt

  • Pour the milk and cream mixture into the pan and stir continuously to avoid the formation of lumps

  • As soon the mixture thickens a little add grated mozzarella and parmesan cheese. Stir it continuously until the mixture is thick, smooth and silky. I used only parmesan cheese as I didnt have any

  • Season it with salt and pepper

  • Toss in your homemade fettuccine pasta and give it a good stir so that the sauce evenly coats the pasta
  • Transfer it to a serving plate and serve hot garnished with some grated cheese on top


                                Note:
                                • Adding more cheese will definitely taste great. Add more or less as per your wish
                                • Keep stirring after adding the flour else it might burn
                                • Whisk the mixture continuously after adding the flour to avoid the formation of lumps
