Simple vanilla choco chip muffins


This is a recipe that I tried from the back of a box of choco chips. We bought choco chips to make some cookies but when my kids started helping me in the kitchen they found a recipe on the back side of the choco-chips box that said muffins. Immediately they changed their plan from cookies to muffins. It was difficult to convince them from not making so I thought why not give it a try. Good that we tried because it turned out perfect and exactly the way my kids like

The recipe was actually for chocolaty choco-chip muffins but we made vanilla choco-chip muffins and the reason was very simple......... we ran out of cocoa powder :)  The kids loved it so much that they packed some for their friends at school too. Its nice to see that they want to share and enjoy

We made these muffins long back but could not post the recipe. Time to make it again I think :)


Serves... makes 9 muffins 
Serve option... Room temp

This is what u'll need...

All-purpose flour / Maida - 1 cup
Corn flour - 2 tbspn
Sugar - 1/2 cup
Choco chips - 1/4 cup + 1 tbspn
Oil - 1/4 cup
Milk - 1/3 cup
Vanilla essence - 1/2 tspn
Baking powder - 1/2 tspn
Egg - 1

Here is the stir....
  • Measure 1 cup of all-purpose flour / maida. Put it in a sieve

  • Add 1/2 teaspoon of baking powder into the flour
  • Measure 2 tablespoon of corn flour and add it to the flour
  • If you are planning to make chocolate muffins then add 1/4 cup of cocoa powder to the flour in this step
  • Sieve this well 3-4 times and keep it aside
  • Crack open an egg into a wide bowl. It is always better to use eggs at room temperature. If they are in the fridge then take them out and leave them on the kitchen counter for 15-20 minutes before use
  • Add 1/2 teaspoon of vanilla essence to the egg and whisk it till frothy
  • Measure in 1/2 cup of sugar and whisk till creamy

  • Pour 1/4 cup of oil into the egg mix and whisk really well
  • Add the flour mix to the wet mix. Add 1/3 portion at a time and whisk till everything is incorporated well. Dont over-mix
  • Pour 1/3 cup of milk andmix well. It is good to add the milk along with other wet ingredients. We forgot so added it in the end
  • Add choco chips and fold in gently
  • Pour the batter only halfway into cupcake liners and top it again with a little more choco chips
  • Bake this in a 180 degrees preheated oven for about 25 minutes or till a toothpick inserted comes out clean
  • Remove from oven and let cool for about 5 minutes
  • Transfer them to a wire rack and let cool completely
  • Serve with love and enjoy



                                              Note: 
                                              • Dont overmix the batter afer adding the flour. Just mix till everything is well combined
                                              • If you are planning to make chocolate muffins then add 1/4 cup of cocoa powder to the flour before sifting the flour
                                              • Mix sugar and egg very well till they turn creamy
