Three Pepper Penne Pasta


We love pasta at home and most of the times the kids insist of making pasta with white sauce. That is their favourite and they can eat it any time of the day :) I wanted to try something different and a little spicy rather than the regular cheesy stuff that we eat. As I had some coloured bell peppers on hand and wanted to use it up before they would go unusable. Just tossed them with some spices and voila it was a huge hit among the kids. It was little extra spicy but we still loved it a lot. Will definitely be making it again and again :)

The pasta turned out very colourful and my picky kids ate the bell peppers too without making any fuss. They loved it so much that they ate some from my portion too before I could get back from the kitchen with a bottle of water. Giggling they said ....its so yummy mummy that we cant stop eating .... why dont you make more next time. That really means they fell in love with the dish 

It takes just five minutes to bring the dish together once you have cooked your pasta. Colourful, tasty, spicy and simple has made this dish our recent favourite. Try it and I promise you will love it. Your kids will love it too

  

Serves... 3 ppl
Serve option... Hot

This is what u'll need...

Pasta - 2 cups
Butter - 1 tbspn
Onion - 1 small
Bell peppers - 1/4 of each colour
Garlic cloves - 5-6
Chilli flakes - 1 tspn
Mixed herbs - 1 tspn
Olives - 2 tbspn
Salt to taste

Here is the stir....
  • Boil a pot with enough water. Bring it to a boil and add some salt. Add pasta to the boiling water and cook till al-dente. Drain and set aside
  • Put a tablespoon of butter in a pan
  • Finely chop the garlic cloves and add it to the hot butter. Saute this for a few seconds until the raw smell of garlic is gone
  • Spoon in 1/2 teaspoon of red chilli flakes and 1/2 teaspoon of mixed herbs to the butter. Stir continuously for about 15 seconds
  • Slice onion and toss them into the pan. Turn the heat to high and saute the onions for half a minute
  • Slice bell peppers as needed and toss it in the pan. Saute for a couple of minutes
  • Season it with some salt
  • Add the cooked pasta to the pan and give it a good toss so that everything is blended well. Turn off the flame

  • Add some sliced black olives to the pasta and give it one final toss
  • Transfer it to a serving bowl and garnish with some shredded mozzarella cheese (optional)


                                  Note: 
                                  • Keep the flame on high to keep the veggies crisp
                                  • The garlic , red chillies and mixed herds are enough to spice up the pasta but you can add more is you want
                                  • Shred some mozzarella cheese on top as garnish to make it look more inviting
